La farine d\u2019\u00e9peautre biologique que nous utilisons dans toutes nos recettes (pain, g\u00e2teaux, cr\u00eapes..) est non hybrid\u00e9e et vient de France. Les confitures cuites au chaudron avec du sucre de canne biologique sont issues de fruits d\u2019Hodebert ou des vergers voisins. Nos yaourts bio, \u00e0 la fleur d\u2019oranger, sont \u00e9galement \u00e9labor\u00e9s sur place. Le pain que nous vous proposons pour les petits d\u00e9jeuners est biologique, \u00e0 la farine d&rsquo;\u00e9peautre selon une recette de Sainte Hildegarde de Bingen. L\u2019\u00e9peautre est une c\u00e9r\u00e9ale consid\u00e9r\u00e9e comme la base d\u2019une alimentation saine par Sainte Hildegarde de Bingen. Elle poss\u00e8de de nombreuses propri\u00e9t\u00e9s et bienfaits. Anc\u00eatre du bl\u00e9, l\u2019existence de l\u2019\u00e9peautre est attest\u00e9e d\u00e8s -9000 avant JC. Trois vari\u00e9t\u00e9s sont aujourd\u2019hui connues, mais \u00e0 l\u2019\u00e9poque de Sainte Hildegarde, tous les \u00ab bl\u00e9s v\u00eatus \u00bb \u00e9taient qualifi\u00e9s d\u2019\u00e9peautre. La composition, et la teneur en nutriments de l\u2019\u00e9peautre non-hybrid\u00e9 en font un aliment d\u2019exception qui se consomme dans tous types de plats. Il est riche en acides gras mono et poly-insatur\u00e9s, en min\u00e9raux et en vitamines (E et B). Ses prot\u00e9ines contiennent les huit acides amin\u00e9s essentiels dont le corps a besoin, ce qui est rare pour une c\u00e9r\u00e9ale. Notre pain convient ainsi parfaitement aux v\u00e9g\u00e9tariens. Vous pensez que l&rsquo;\u00e9peautre est une c\u00e9r\u00e9ale du pass\u00e9 ? We highly recommend the Chateau as a staging place to visit the Chateaus of the Loire Valley. The rooms are ample, well furnished with beautiful antiques. The breakfast is amazing and the setting is like no other. Ivana does a fantastic job as owner-hostess and talking about the history of the Chateau is most interesting. It was the perfect home base for many reasons.&#010;The thought of touring the beautiful chateaux of the Loire, and then coming back each night to a hotel room horrifies me.  But using the Chateau D'hodebert as our lodging meant that each day when we would come back from a long day of touring we were still surrounded by the character and authenticity of the region.  Coming back to this fabulous family chateau meant that the experiences of our day were all the more enhanced!&#010;Although, the chateaux that are open to the public are exquisite, most of them do not feel like they are lived in.  Coming back to Hodebert and enjoying a glass of wine in one of the living areas, or taking a walk in the park-like setting brought chateau living to life!&#010;Feeling the chateau around us truly made our trip.&#010;Not only are the furnishing and color choices warm and inspiring, but the true French hospitality that Ivana has on offer are memorable, to say the least.  Her attention to detail throughout the house and property are exemplary.  From the thoughtful design choices she and her husband have made, to the sublime organic breakfast she offers (home baked breads, eggs from her chickens, house made yogurt and jams), everything at Hodebert is exemplary.&#010;More than anything, staying here was a fascinating example, not only of a gorgeous chateau, but of how a family estate can survive for hundreds of years and still manage to move into the future.  It is a true family house.... and a happy one, at that!  And that is in no small part from the dedication and hard work Ivana and her family continue to pour into the estate.
